New potato contains fewer carbohydrates and calories

Farmers have developed a new potato that has a third fewer carbohydrates and a quarter fewer calories than normal potatoes. This potato matures much faster and thus has less time to develop starch. The potato is aimed at the portion of the market who are trying to focus on a low carbohydrate diet such as the Atkins diet.
